Cauliflower Kale Bisque

Cauliflower, Kale and red pepper bisque. This is a super healthy, rich and creamy bisque in a sage, thyme, and cumin veggie broth.  Ready in less than 30 mins.

RECIPE 
1 head of cauliflower 
5 c veggie broth 
1 minced red pepper 
1 c minced kale leaves 
⅛ tsp cumin 
1 tsp dried sage or 1 Tbsp fresh minced 
½ tsp thyme or 2 tsp fresh minced 
¼ tsp ground mustard seeds

Remove the cauliflower stem (reserve for juicing or other applications) and cut the florets into 1-2” pieces. Place in a medium pot with 5 cups of veggie broth. Bring to a boil and simmer for 15 minutes. Using an immersion blender blend until smooth with some small chunks remaining for texture.

*Optionally you can pour the mixture into a conventional blender, blend and return to the pot. Once blended, add the kale, red peppers, cumin, sage and thyme.

Simmer for 10-15 mins uncovered. It will thicken.
