Dark Chocolate Moose

A healthy chocolate dessert? Yup! I created a delicious, plant-based version of the classic mousse. There are many different fruit combinations. In this recipe, I made chocolate cherry and a chocolate blueberry version. Combining purple sweet potatoes, avocado, organic cacao powder with date sugar.

I included alternatives for your choice of sweetener. The sweet potatoes bring a subtle sweetness to the party while adding high fiber, vitamins, and minerals.

Avocado adds healthy fats, additional nutrients, and creaminess. This combination might seem odd but it works very well.

1 cup cooked sweet potatoes
½ avocado
4 Tbsp cacao powder
1 Tbsp date sugar*
1 cup frozen fruit*
¼ to ½ cup organic plant-milk

Optional: Vegan dark chocolate or cacao nibs.

I used purple sweet potatoes but any sweet potato can be substituted. For those of you that are ok using a microwave, microwave the sweet potato, wrapped in a damp paper towel for 5 minutes. Other options are steaming and baking.

I removed the skins but if you have a powerful food processor you can blend them in smoothly.

The sweetness of the potatoes might be enough for some. As you blend these ingredients taste it for sweetness and texture.

Other options for added sweetness are organic maple syrup, organic agave, and organic molasses. (Date sugar is the healthiest)

I keep many organic frozen fruits on hand at all times.

Add 1 cup of your favorite fresh or frozen fruit.

In this example, I made one with blueberries and the other with cherries. The cherry is amazing and my favorite. Bananas, mangos, pineapple, and strawberries make incredibly delicious options as well.

Regarding the plant-milks. Start by adding 1/4 cup and check the pureed texture. Add more until you reach a consistency you like.

Combine all the ingredients in a food processor and blend until smooth.

Will keep in the refrigerator for 4 days, but I am sure it will not last more than 5 minutes.

This is a household favorite. You can serve this as is or over fruit like bananas and strawberries. Experiment with combinations.
