Dark Chocolate Raspberry Peanut Butter Cookies

This recipe is inspired for those of us that are quarantined due to the Corona Virus 19 pandemic.   A very simple delicious treat.

Pre-heat your oven to 350 degrees F while you prepare this.


1 cup of oat flour.  (take 1 cup of quick oats and blend them into a powder)
1/4 cup maple syrup
1 cup peanut butter (I use 1 ingredient organic)
1/2 tsp baking soda
2 Tbsp Cacao powder
1/4 cup plant-based milk of your choice
6 Tbsp of your favorite fruit preserve (I used 1 ingredient organic raspberry)

OPTIONAL but worth it if you have these on hand.

1/2 tsp turmeric + 1/4 tsp black pepper
1/2 tsp ground ginger powder

Combine all the ingredients in a medium bowl.

This will make 20 2.5″  cookies.  Line a baking sheet with parchment paper.

Let this mixture set for about 5 minutes while the oats absorb the liquids.  Letting it rest will reduce the stickiness allowing you to roll the balls without sticking to your hands.

Roll 1″ balls in our hands and place on your cookie sheet.  5 balls across and 4 down will provide enough space = 20 cookies perfectly.

Once all 20 balls are placed, use a fork and push the balls down in 1 direction, then the opposite direction making a cross mesh.

Bake at 350 Degrees F for 12 minutes.  Once done, don’ touch them. Take them out and let set for 10 minutes.  They will firm up a bit.
