Lentil Curry Fusion Stew

This rich, herb dense fusion stew brings familiar flavors of a lentil curry with added flavors that many would not expect.  Purple sweet potatoes add texture, sweetness, and nutrition to an already nutritionally dense dish.  The addition of sliced radish adds a unique flavor that blends perfectly.  Spinach brings greens to the party as well as flavor

5 cups low-sodium veggie broth
15 oz can northern white beans
½ tsp dried thyme
1 tsp dried sage or 1 Tbsp fresh
½ tsp garlic powder
1 tsp turmeric
¼ tsp black pepper
1 tsp curry powder
3 bay leaves
1 cup uncooked lentils
½ cup uncooked quinoa
1 cup sliced radishes
4 cups fresh spinach
1 cup diced purple sweet potatoes
1 medium diced onion
2 cups sliced purple cabbage

Combine all the ingredients to a medium saucepan.

Bring to a boil.

Cover and let simmer for 30 minutes.

Makes 4 large meal-sized portions.
