I created this recipe for VegFestColorado 2018 for SunMilk brand sunflower milk. Pesto Alfredo with mushrooms & spinach over whole grain Rotini. This is a very rich, creamy, vibrant sauce. Typical pine nuts used for pesto was replaced with delicious creamy SunMilk brand sunflower milk. It has 3 ingredients: Sunflower Seeds, non-GMO Sunflower Lecithin and Filtered Water.
SunMilk is also vegan, paleo, gluten free, dairy free, peanut free and soy-free.
Pesto Alfredo 1 ½ cups SunMilk* 1 Avocado 2 cups of fresh basil 3 garlic cloves 3 Tbsp Nutritional Yeast 1 Tbsp Lemon Juice ¼ tsp black pepper
Combine in a food processor until smooth.
This delicious healthy sauce will make enough for ½ box (½ pound dry) of Rotini or other pasta.
After cooking your pasta, set it aside.
Gently saute 16 oz of mushrooms and 1-2 full bundles of fresh spinach.
Double the entire recipe if making the full pound of pasta.
This healthy, delicious sauce also goes great over raw salads as a dressing, baked potatoes or as a dip.
*If you do not have access to SunMilk, you can use any unsweetened plant-milk you have available.
In a food processor or blender combine the 1 ½ cups with 3 Tbsp unsalted sunflower seeds
